Well, it happens many times that i want something sweet, i go to the fridge, look inside and improvise. This is what i did this time too and i come up with a wonderful cake.
-8oz butter at room temperature
-1 cup sour cream
-vanilla sugar or essence at taste
-2 ts baking powder
-3 cups flour
-1 cup water
-shredded coconut for decorating
Make the syrup first. Boil all the ingredients together for a few minutes and stir constantly and get sure all the cocoa dissolved and you don't have any balls left. Let it cool off.
For the cake, mix the flour with the baking powder.
Beat up together the butter and the sugar until fluffy. Add in the eggs one at a time. Add the sour cream, vanilla sugar or essence and the flour mixed with baking powder. Mix them well with a spoon. Pour the dough into a baking pan 10 inch wide. Don't forget to use baking paper so the cake don't get stuck on the pan.
Bake it at 350F and test it with a tooth-pick, when the tooth-pick come out clean, the cake is ready. Don't over-bake it. Flip it over, remove the baking paper and put it back in the baking pan. Cut it the way you like, pour the syrup all over the cake. Spread the coconut in top of the cake.
