These are two thing that complement each other very well: the duck meat is sweet and goes very well with the sauerkraut.
-1 small duck
-2-3 pounds sauerkraut
-1/2 cup olive oil
-2-3tbs tomato sauce
-2-3 bay leaves
Clean up the duck very well. Rinse it. Put salt, pepper, thyme and oregano all over the duck.
Into a pot that goes in the oven (without plastic handles!!!), warm up the oil, add the tomato paste and stir them together for 1-2 minutes. Add the sauerkraut and stir well, add water until almost cover the sauerkraut. Add the pepper and the bay leaves. Place the duck in top, with the breast side down. Cover the pot with a lid or with aluminium foil. Bake it in the oven at 400F for about 1 hour, turn the duck with the breast side up. Put the pot back in the oven for another hour. If there is too much juice in the pot, take the lid off before you put the pot back in the oven. If not, leave it there. 5 minutes before you take the pot off of the oven, add the dill and mix it with the sauerkraut.
